1. Cook the Pasta
In a large pot of salted boiling water, cook the mafaldini pasta according to package instructions until al dente. Drain and set aside.
2. Prepare the Sauce
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in Calabrian chili paste and cook for another minute.
3. Add Vodka and Cream
Carefully add vodka to the skillet, stirring to combine. Let it simmer for about 2-3 minutes until slightly reduced. Pour in heavy cream and stir until well incorporated. Allow to simmer for another 3-4 minutes.
4. Cook the Shrimp
Add the Royal Red shrimp to the sauce, cooking until they turn pink and are cooked through, approximately 4-5 minutes. Season with salt and black pepper to taste.
5. Combine Pasta and Sauce
Add the cooked mafaldini pasta into the skillet, tossing to coat the pasta evenly with the sauce. Stir in grated Parmesan cheese until melted and well combined.
6. Prepare Topping
In a small bowl, mix bread crumbs with a drizzle of olive oil, salt, and pepper. Toast in a dry skillet until golden brown.
7. Serve
Plate the shrimp mafaldini and sprinkle with toasted bread crumbs on top. Serve hot.
