Make the Bacon Jam

In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels. In the same skillet, add diced onion and sauté until translucent. Chop the bacon and return to the skillet. Add brown sugar and apple cider vinegar, stirring to combine. Cook on low heat until thickened, about 15-20 minutes. Set aside.

Prepare the Tomatoes

Slice the green tomatoes into 1/4 inch thick slices. In three separate bowls, set up your dredging station: one with flour mixed with salt and pepper, one with buttermilk, and one with cornmeal.

Fry the Tomatoes

Dip each tomato slice first in the flour, then buttermilk, and finally in the cornmeal. Heat oil in a large skillet over medium-high heat. Fry the tomato slices in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble the Dish

On a plate, layer fried green tomatoes, a generous spoonful of bacon jam, and a dollop of pimento cheese on top. Serve immediately.
