Prepare the Cream Mixture

In a medium saucepan, heat the heavy cream over medium heat until just boiling. Remove from heat and let it sit for about 15 minutes to infuse the vanilla flavor.

Mix Egg Yolks and Sugar

In a separate bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and creamy.

Combine Mixtures

Slowly pour the warm cream into the egg yolk mixture, whisking constantly to prevent the eggs from scrambling. If using a vanilla bean, split it, scrape the seeds into the mixture, and add the pod for extra flavor.

Strain the Mixture

Strain the mixture through a fine-mesh sieve into a jug or bowl to remove any cooked egg bits and the vanilla pod.

Prepare the Ramekins

Preheat your oven to 325°F (160°C). Place your ramekins in a baking dish and fill them with the custard mixture, leaving some space at the top.

Bake

Carefully pour hot water into the baking dish around the ramekins, about halfway up the sides. Bake in the preheated oven for 30-40 minutes, or until the custard is set but still slightly jiggly in the center.

Cool and Refrigerate

Remove the ramekins from the water bath and allow them to cool at room temperature. Once cooled, cover with plastic wrap and refrigerate for at least 2 hours, or overnight.

Caramelize the Sugar

When ready to serve, sprinkle the top of each custard with a thin layer of extra granulated sugar. Using a kitchen torch, caramelize the sugar until it's golden brown and bubbly. Alternatively, you can place them under a broiler for a minute or two.

Allow the caramelized sugar to cool for a minute before serving. Enjoy your homemade crème brûlée!
