1. Cook the Bacon

Preheat the oven to 400°F (200°C). Place the bacon slices on a baking sheet and bake for about 15-20 minutes or until crispy. Remove from the oven and let cool, then crumble into pieces.

2. Prepare the Grits

In a medium saucepan, bring the water to a boil. Stir in the grits and salt. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy.

3. Add Cheese

Once the grits are cooked, stir in the cheddar cheese until melted and well combined. Remove from heat.

4. Prepare Toppings

Chop the green onions and dice the tomato.

5. Assemble the Dish

Spoon the cheesy grits into serving bowls. Top with crumbled bacon, chopped green onions, and diced tomatoes. Serve warm.
