Method

Basic Pound Cake Batter (makes one 9x5-inch loaf)

Prep

Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line with parchment leaving an overhang for easy removal.

Cream butter and sugar

In a large bowl or stand mixer fitted with the paddle attachment, beat the softened butter on medium speed until smooth and pale, about 2 minutes. Gradually add the granulated sugar and beat 3–4 minutes more until light and fluffy.

Add eggs

Add the eggs one at a time, beating well and scraping the bowl after each addition so the mixture stays emulsified.

Combine dry ingredients

In a separate bowl, whisk together the flour, baking powder, and salt (and cocoa powder here if making the chocolate or red velvet versions).

Alternate adding dry and milk

With the mixer on low, add one-third of the dry ingredients, then half the milk, then another third of dry, the remaining milk, and finish with the remaining dry. Mix just until combined and no streaks of flour remain. Scrape the bowl.

Add flavor base

Stir in the vanilla extract (and any base additions such as lemon zest/juice for lemon, cinnamon for cinnamon version). If making red velvet, add the vinegar, buttermilk (use milk swap mentioned), and red food coloring now. If making chocolate, fold in the hot coffee/water with the batter so cocoa hydrates fully.

Mix-ins

Gently fold in any add-ins: mashed banana and chopped nuts for banana-nut, diced strawberries (tossed with 1 tsp powdered sugar) and/or white chocolate chips for strawberry versions, poppy seeds for lemon poppy-seed, or extra vanilla/cinnamon for the vanilla-cinnamon. Do not overmix.

Bake

Pour batter into the prepared loaf pan and smooth the top. Bake in preheated oven 50–65 minutes, rotating halfway, until the top is deep golden (or appropriate color for red velvet/chocolate) and a toothpick inserted in the center comes out with a few moist crumbs. If top browns too quickly, tent with foil.

Cool & finish

Allow cake to cool in the pan 10–15 minutes, then use parchment overhang to lift out and transfer to a wire rack to cool completely before glazing or slicing. For a simple lemon glaze, whisk together 0.5 cup confectioners' sugar, 1 tbsp lemon juice, and 1 tsp milk until smooth; drizzle over cooled lemon loaf.

Lemon Pound Cake

Add 2 tbsp lemon zest and 2 tbsp fresh lemon juice to the batter in 'Add flavor base' step. Bake as directed. Make lemon glaze and pour over cooled loaf. Optionally brush warm loaf with an extra teaspoon of lemon juice while still warm for extra brightness.

Vanilla & Cinnamon Pound Cake

Increase vanilla to an additional 1 tsp (total 2 tsp) and add 1 tsp ground cinnamon to the dry ingredients. Proceed with batter assembly and bake as directed.

Banana Nut Pound Cake

Replace 1/2 cup of the milk with 1 cup mashed ripe banana (about 1 large banana). Fold 1/2 cup chopped nuts into batter at 'Mix-ins'. Bake; the internal crumb will be slightly moister — test for doneness by toothpick. Toast nuts before chopping for deeper flavor if desired.

Strawberry / White Chocolate Strawberry Pound Cake

Toss 1 cup diced strawberries with 1 tsp powdered sugar and let sit 5–10 minutes, then drain excess juice. Fold berries gently into batter along with 1/2 cup white chocolate chips for the white-chocolate-strawberry version. Bake as directed; reduce baking time slightly if needed (check at 45 minutes).

Chocolate Pound Cake

Replace 1/2 cup of the all-purpose flour with 1/2 cup unsweetened cocoa powder (or whisk 1/2 cup cocoa with dry ingredients) and stir in 1/4 cup hot coffee or hot water with the batter to bloom the cocoa. Optionally increase sugar by 2 tbsp for a sweeter chocolate cake. Bake until toothpick shows moist crumbs.

Lemon Poppy-seed Pound Cake

Add 2 tsp poppy seeds along with the lemon zest/juice in the 'Add flavor base' step. Fold seeds evenly through the batter and proceed to bake. Finish with lemon glaze if desired.

Add 1 tbsp cocoa powder, 2 tsp red food coloring, replace regular milk with 1/2 cup buttermilk, and stir in 1 tsp white vinegar with the wet ingredients. Proceed to bake. For a classic finish, top slices with a simple cream cheese glaze (combine 2 oz cream cheese, 1/2 cup powdered sugar, and 1–2 tsp milk until smooth).
