Prep vegetables and eggs
Peel and finely dice the onion (about 1/2 cup). Core, seed and dice the bell pepper into roughly 1/4-inch pieces (about 2/3 cup). Crack the eggs into a medium bowl, add the milk, 1/2 teaspoon salt and 1/2 teaspoon black pepper, and whisk until well combined and slightly frothy.

Sauté vegetables
Heat 1 tablespoon olive oil in a 10-inch nonstick skillet over medium heat. Add the diced onion and sauté 2–3 minutes until translucent. Add the bell pepper, season with the remaining 1/2 teaspoon salt and 1/2 teaspoon black pepper, and cook another 4–5 minutes until peppers are softened but still slightly crisp. Push vegetables to one side of the pan or remove to a plate while you cook the eggs if your pan is small.

Scramble the eggs
Reduce heat to medium-low and add 2 tablespoons butter to the skillet. Once melted and foaming, pour the egg mixture into the pan. Let sit undisturbed 10–15 seconds, then gently stir with a rubber spatula, pulling the cooked edges toward the center. Continue to cook, folding often, until eggs are mostly set but still soft and creamy — about 2–3 minutes. Remove from heat just before fully firm.

Combine with vegetables and cheeses
Return the sautéed peppers and onions to the pan with the eggs. Sprinkle shredded sharp cheddar over the eggs and fold gently to combine so the cheddar melts slightly. Sprinkle the crumbled feta and chopped parsley or chives over the mixture and fold once to distribute. Taste and adjust seasoning with a pinch of salt or pepper if needed.

Warm the hoagie rolls: split the rolls and place them cut-side up on a baking sheet. Optionally toast under a broiler or in a 350°F (175°C) oven for 2–4 minutes until just golden. This step prevents sogginess and adds slight crunch.

Finish and serve: close the hoagies, slice in half if desired, and serve immediately while warm.
