Brewing Process

Prepare the Brew

In a large brew kettle, heat 5 gallons of water to 160°F (71°C).

Mash the Grains

Add 10 lbs of barley malt to the heated water and stir well. Maintain the temperature at 150°F (65°C) for 60 minutes.

Sparging

After the mash, sparge the grains with an additional 170°F (77°C) water to collect the wort in the kettle.

Boil the Wort

Bring the wort to a boil and add 2 oz of Cascade hops. Boil for 60 minutes, adding more hops as desired in the last 15 minutes of the boil.

Cool the Wort

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Fermentation

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal the vessel with an airlock.

Conditioning

Allow the beer to ferment for 1-2 weeks, checking the specific gravity to ensure fermentation is complete.

Bottling

When fermentation is complete, dissolve 3 oz of priming sugar in a small amount of boiling water, then add it to the beer before bottling.

Carbonation

Bottle the beer and store it at room temperature for 1-2 weeks for carbonation.
