In a large mash tun, combine the pale malt, crystal malt, and Munich malt with 5 liters of filtered water at a temperature of 66°C (150°F). Stir well to ensure all grains are saturated.

Prepare the Mash

Allow the grains to steep for 60 minutes, maintaining the temperature between 65°C to 68°C (149°F to 154°F). This process will extract the sugars necessary for fermentation.

After 60 minutes, drain the liquid (wort) from the grains into a kettle. You can rinse the grains with an additional 1 liter of hot water to extract more sugars, if desired.

Bring the drained wort to a boil over high heat. Once boiling, add the Cascade hops and boil for 60 minutes.

With 15 minutes left in the boiling process, add the Centennial hops to the kettle. This will contribute to the aroma and flavor.

After the 60 minutes of boiling, remove the kettle from heat and cool the wort quickly using a wort chiller or by placing the kettle in an ice bath until it reaches around 20°C (68°F).

Cool the Wort

Once cooled, transfer the wort to a sanitized fermenter and pitch the American Ale yeast into the wort. Seal the fermenter and attach an airlock.

Allow the beer to ferment at a consistent temperature of around 18°C to 22°C (64°F to 72°F) for about 1 to 2 weeks, or until fermentation is complete.

Fermentation

Once fermentation is complete, prepare your bottles and caps by sanitizing them thoroughly.

Prepare for Bottling

Siphon the beer into the bottles, leaving a small amount of headspace. Cap the bottles securely.

Bottle the Beer

Allow the bottled beer to carbonate at room temperature for an additional 1-2 weeks before refrigerating.
