Scotch Ale is the pride of Great Falls, MT embodying the spirit, history, and allure of Montana. Rich and complex, this ale combines the malt flavors of toffee, dark chocolate, caramel, and molasses with a subtle hint of cherry smoke.

In a large mash tun, combine the Pale Malt, Crystal Malt, Chocolate Malt, Munich Malt, Caramel Malt, Roasted Barley, and Cherrywood Smoked Malt. Add 5 gallons of heated water (around 160°F). Stir well to ensure all grains are saturated.

Prepare the Mash

Allow the mash to rest for 60 minutes at around 150°F. This will convert the starches in the grains to sugars.

After the mash rest, sparge the grains with hot water and collect the wort in a kettle. Bring the wort to a boil.

Boil the Wort

Once boiling, add 2 tablespoons of Northern Brewer Hops and boil for 60 minutes. 15 minutes before the end of the boil, add 1 tablespoon of Fuggle Hops.

Add 1 tablespoon of molasses to the kettle in the last 5 minutes of the boil for added flavor.

After boiling, cool the wort rapidly to around 70°F using a wort chiller or an ice bath.

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Sprinkle the Scotch Ale yeast on top and seal the vessel with an airlock.

Pitch the Yeast

Allow the beer to ferment at around 68-72°F for 2 weeks.

Fermentation Period

After fermentation, sanitize your bottles and caps. Prepare a priming solution if desired.

Prepare for Bottling

Siphon the beer into the bottles, leaving about an inch of headspace. Cap the bottles securely.

Bottle the Beer

Let the bottles condition in a dark place for about 2 weeks before enjoying.
