Preheat the Oven

Preheat your oven to 425°F (220°C).

Prepare the Chicken

Pat the bone-in chicken thighs dry with paper towels. This will help them get crispy when cooked.

Season the Chicken

In a large bowl, combine the olive oil, minced garlic, chopped rosemary, salt, and black pepper. Add the chicken thighs and coat them evenly with the marinade. Let marinate for at least 30 minutes, or up to overnight in the refrigerator.

Prepare the Baking Dish

If using, chop vegetables into bite-sized pieces and spread them evenly in a large baking dish. This will serve as a bed for the chicken.

Place the Chicken in the Oven

Arrange the marinated chicken thighs on top of the vegetables in the baking dish. Squeeze the juice of the lemon over the chicken and place the lemon halves in the dish as well.

Bake the Chicken

Bake in the preheated oven for 40-45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden brown and crispy.

If using, pour the chicken broth around the chicken during the last 10 minutes of cooking for added flavor and moisture.

Once the chicken is done, let it rest for 5-10 minutes before serving. This allows the juices to redistribute. Serve hot with the roasted vegetables.
