Begin by hand-harvesting the ripe Riesling grapes from the Viesslinger Ried vineyard in Wachau, Austria. Ensure that only the best quality grapes are selected.

Harvesting the Grapes

Once harvested, crush the grapes to release the juice. Use a hydraulic press to extract the juice while minimizing the skin contact to preserve the Riesling's delicate flavors.

Transfer the grape juice into fermentation tanks. Add 10g of yeast to initiate fermentation. Monitor the temperature to ensure it remains around 18-20°C (64-68°F) for optimal fermentation of Riesling.

Add 50mg/L of sulfur dioxide to the must after fermentation begins to prevent unwanted microbial growth and oxidation.

Allow the wine to age in stainless steel tanks for 6-12 months, depending on desired flavor and structure. Monitor regularly for flavor development.

Aging

Once the aging process is complete, filter the wine to clarify it. Fill the bottles with the Riesling and cork them securely. Label the bottles as 'Veyder-Malberg 2023 Riesling'.
