Destem and crush the grapes. Press the crushed grapes to extract the juice, separating the skins and seeds.

Transfer the extracted juice into a fermentation vessel. Add 1000 ml of water to dilute the juice if necessary for the desired sugar concentration.

Juice Preparation

Sprinkle 10 g of white wine yeast over the surface of the juice. Allow it to hydrate for 15 minutes before stirring gently to incorporate.

Cover the fermentation vessel with a clean cloth and secure it. Allow the mixture to ferment at a controlled temperature of 18-22°C for 2-3 weeks, stirring occasionally.

After fermentation is complete, add 2 g of sulfites to stabilize the wine and prevent spoilage.

Adding Sulfites

Transfer the wine to a clean carboy, leaving the sediment behind. This process is called racking and helps clarify the wine.

Racking

Allow the wine to age in a cool, dark place for at least 6 months. This will enhance the flavors and aromas of the wine.

Aging

Once aging is complete, bottle the wine using sanitized bottles and corks. Store bottles horizontally in a cool, dark place.
