Prepare Mango Puree

If using fresh mango

Peel and dice 2 medium ripe mangoes (about 1.5 cups diced). Place the mango flesh in a blender and blend until very smooth. Scrape down sides as needed. Measure out 1.5 cups of puree for the recipe; reserve any extra for another use.

If using frozen mango

Use about 1 1/2 cups frozen mango chunks. Add a tablespoon of plant milk if the blender struggles, then blend until smooth and measure 1.5 cups.

Blend Lassi

Combine the mango puree, soy (or coconut) yogurt, almond milk, maple syrup, lime juice and a pinch of sea salt in the blender.

Add ground cardamom and vanilla extract.

If you prefer chilled and slightly frothy lassi, add ice cubes to the blender now. For a thicker, creamier lassi omit ice or use fewer cubes.

Blend on high for 30–60 seconds, until completely smooth and slightly frothy. Taste and adjust sweetness or acidity: add up to 1 more tablespoon maple syrup if you want it sweeter, or another 1/2 teaspoon lime juice if it needs brightness.

Serve & Garnish

Pour the lassi into two tall glasses (approximately 12 oz total yield).

Garnish each glass with a sprinkle of chopped pistachios, a pinch more ground cardamom if desired, a mango slice on the rim, and a mint leaf.

Serve immediately while chilled.
