Make seasoning mix

In a small bowl combine chili powder, ground cumin, smoked paprika, garlic powder, onion powder, dried oregano, kosher salt, black pepper, brown sugar, and crushed red pepper flakes. Stir until uniform. Split mix into two equal portions (about 3 tbs each) — one for beef, one for chicken.

Cook the beef

Heat a large skillet over medium-high heat and add 1 tbs vegetable oil. Add the ground beef and break up with a spoon. Cook until no pink remains, about 6–8 minutes. Drain excess grease if desired, leaving about 1 tablespoon in the pan. Sprinkle half of the seasoning mix over the beef, stir to coat, then add 1 cup water. Reduce heat to medium-low and simmer, stirring occasionally, until the sauce is slightly reduced and beef is saucy, about 6–8 minutes. Taste and adjust salt if needed. Keep warm on very low heat.

Cook the chicken

While beef simmers, heat another large skillet over medium-high heat with 1 tbs vegetable oil. Add the chicken pieces in a single layer and cook undisturbed for 3–4 minutes to get a light sear. Stir and continue cooking until cooked through and juices run clear, about 4–6 more minutes (internal temp 165°F / 74°C). Sprinkle the remaining half of the seasoning mix over the chicken and toss to coat. If you prefer a saucier chicken, add 2–3 tbs water and simmer 1–2 minutes. Remove from heat and keep covered to retain warmth.

Optional: keep warm for service

Transfer proteins to warm shallow pans and cover with foil; hold in a 200°F (95°C) oven if serving buffet-style for up to 30–45 minutes. Stir once before serving to redistribute juices.

Fresh Pico de Gallo

Combine diced roma tomatoes, 1/4 cup finely diced white onion, 1/4 cup chopped cilantro, minced jalapeño (if using), 1 tbs lime juice and 1/2 tsp kosher salt in a bowl. Toss gently and let rest 10–15 minutes at room temperature so flavors meld. Taste and adjust lime and salt as needed.

Creamy Cilantro-Lime Sauce

Whisk together mayonnaise, 1/2 cup sour cream, 1/4 cup chopped cilantro, 2 tbs lime juice, minced garlic, hot sauce (if using) and 1/2 tsp kosher salt until smooth. Refrigerate at least 15 minutes to meld flavors. Thin with 1–2 tbs water if you prefer a pourable consistency.

Toppings & Assembly

Warm tortillas: stack tortillas and wrap in a slightly damp clean kitchen towel; microwave in 30-second intervals until warm and pliable (about 1–1.5 minutes total) or heat briefly on a dry skillet (20–30 seconds per side). Keep wrapped to stay warm.

Set out toppings in shallow bowls: shredded cheese, shredded lettuce, diced tomatoes, diced onion, cilantro, pickled jalapeños, sour cream, pico de gallo, and lime wedges.

Assemble tacos: place a warmed tortilla on a plate, spoon 2–3 tbs of cooked protein (beef or chicken) into the center, top with shredded cheese (a small handful), lettuce, pico de gallo, a drizzle of creamy cilantro-lime sauce, a squeeze of lime, and additional pickled jalapeños or onion as desired. Repeat for remaining tortillas.

For a taco bar: arrange proteins in separate serving dishes with spoons, label them, and place warmed tortillas and all toppings and sauces within reach so guests can build their own tacos. Keep extra napkins and plates available.

Warm black beans and Mexican rice according to package or stovetop instructions and transfer to serving bowls. Garnish beans with cilantro and a squeeze of lime if desired.
