Base infusion
Prepare ginger
Peel the ginger root with a spoon or peeler and slice it into 1/8–1/4-inch thick rounds (or roughly chop if preferred). You should have about 8 oz by weight. Smaller pieces extract faster.
Simmer ginger
Place the sliced ginger in a medium saucepan with 1.5 liters (about 6 cups) of water. Bring to a boil over medium-high heat, then reduce to a gentle simmer. Simmer uncovered for 20–25 minutes to extract a strong ginger flavor.
Strain infusion
Remove from heat and let cool slightly for 5 minutes. Strain the ginger liquid through a fine-mesh sieve into a heatproof pitcher or bowl, pressing on solids to extract as much liquid as possible. Discard solids.
Add remaining water
Add the remaining 0.8 liters (about 3 1/4 cups) of cold water to the strained ginger liquid to bring the total volume close to a gallon (3.8 L).

Make simple syrup (if using sugar)
In a small saucepan combine 1.5 cups granulated sugar with 1 cup of the hot ginger infusion (from the simmer step) and heat gently, stirring until the sugar fully dissolves. Remove from heat and let cool. This yields a smooth, well-incorporated sweetener that blends into cold drink without graininess.
Combine syrup with infusion
Once the syrup is cooled to warm/room temperature, pour it into the ginger-water mixture and stir well to combine.
Citrus and balance
Prepare lemons
Zest 10 lemons lightly before juicing to preserve fragrant oils. Juice the lemons to yield approximately 2 to 2 1/2 cups (about 480–600 ml) lemon juice.
Add lemon to drink
Strain the lemon juice through a fine mesh to remove seeds and pulp if you prefer a clearer drink. Stir the lemon juice into the ginger-sweetener mixture.
Adjust seasoning
Add a pinch (about 1 tsp) of salt to round the flavors. Taste and adjust: add more syrup if you prefer sweeter, more lemon juice if you prefer brighter, or a little extra water if too concentrated. Chill thoroughly before serving.
Finish and serve
Chill and serve
Transfer the lemon ginger drink to a gallon container or pitcher, add ice as desired when serving (about 8 cups available to add per serving batch), and float lemon slices and mint leaves for garnish. Stir gently before ladling into glasses.
Storage
Keep refrigerated up to 4–5 days in a sealed container. Stir or shake before serving as separation may occur. For longer storage, omit ice and mint until serving.
