Make Lavender-Mint Simple Syrup
In a small saucepan combine 1 cup water and 1 cup granulated sugar. Stir over medium heat until the sugar fully dissolves and the mixture just comes to a gentle simmer (do not boil vigorously).
Add 2 tablespoons dried culinary lavender buds, 1 cup packed fresh mint leaves, and 1 teaspoon lemon zest to the warm syrup. Reduce heat to low and let the mixture gently steep for 5 minutes, stirring occasionally.
After 5 minutes, remove the saucepan from heat. Stir in 1 tablespoon fresh lemon juice to brighten the flavor.
Let the syrup cool at room temperature for 20–30 minutes to allow flavors to infuse more. Taste and, if you'd like a stronger lavender or mint presence, let steep up to an additional 10 minutes (be cautious: oversteeping lavender can become slightly soapy).
Strain the syrup through a fine mesh sieve or cheesecloth into a clean jar or bowl, pressing on the solids to extract liquid but not forcing bitter oils. Discard the solids and let the syrup cool completely. Refrigerate if not using right away; syrup will keep 1–2 weeks refrigerated.

In a pitcher, add 2 cups of ice cubes (or divide per glass). Pour the cooled lavender-mint syrup over the ice. Use 1/4 to 1/3 cup syrup per 8-oz serving depending on desired sweetness and intensity; for this recipe scale: pour 1/2 cup (120 ml) syrup into the pitcher for a mildly sweet drink, or 3/4 cup (180 ml) for more pronounced flavor.
Add 4 cups cold water or sparkling water to the pitcher and gently stir to combine. Taste and adjust: add more syrup for sweetness or a splash of lemon juice for brightness.
Fill serving glasses with ice if you didn't ice the pitcher. Pour the lavender-mint drink into glasses, garnish each with a mint sprig, a lemon slice, and a light pinch (about 1/4 tsp) of dried lavender buds on top if desired for presentation.
Serve immediately chilled. Keep any leftover drink refrigerated and consume within 2–3 days; stir before serving as settling may occur.
