Method
Prepare Fruit
Prepare mango
Peel the mango and cut the flesh away from the pit. Chop into roughly 1-inch pieces until you have about 1 cup of packed mango.
Prepare pineapple
Trim top and bottom of the pineapple, remove the skin and core, and chop enough flesh to yield 1 cup packed. Measure and set aside.
Blend the Hopper
Place the chopped mango and pineapple into a blender. Add 1 cup whole milk and 1 tablespoon honey (or simple syrup). If you want extra creaminess, add 1/4 cup plain yogurt. Add a pinch of salt to enhance the fruit flavors and 1/2 teaspoon lime juice if using.
Adjust texture
If you prefer a chilled/slushier Hopper, add 4 ice cubes. Blend on medium-high until completely smooth and homogenous, about 30–45 seconds depending on blender power. If too thick, add up to 2 tablespoons more milk and blend again; if too thin, add a few more ice cubes or 2 tablespoons extra yogurt and blend to thicken.
Finish & Serve
Garnish
Garnish with 2 mint leaves on top. Serve immediately with a straw.
