Prepare Spices

Crush cardamom

If using green cardamom pods, place the pods on a cutting board and press each with the flat side of a knife to crack and release the seeds. Reserve whole cracked pods or remove seeds and lightly crush the seeds to expose more aroma.

If using fresh ginger, peel and finely grate it. Measure out ground turmeric, cinnamon, and freshly ground black pepper. Having spices ready helps them bloom evenly into the milk.

Cook Golden Milk

Pour 3 cups of your chosen milk into a small saucepan. Use medium-low heat — you want gentle warming, not a rolling boil.

Add 2 tsp ground turmeric, 1 tbsp grated fresh ginger, 1 tsp ground cinnamon, the crushed cardamom (3 pods or equivalent crushed ground cardamom), and 1 tsp freshly ground black pepper to the milk. Also add 1 tsp ghee or neutral oil if using, and a 1/4 tsp pinch of sea salt.

Warm the mixture slowly for 6–8 minutes, stirring or whisking frequently to prevent the milk from sticking or forming a skin. Bring it to just below simmer: small bubbles will form around the edge but it should not boil vigorously.

Once warmed and fragrant, reduce heat to low and let the mixture steep for 4–6 minutes so the spices infuse the milk. Continue to stir occasionally.

Taste the milk and remove cardamom pods if left whole. Stir in 2 tbsp maple syrup or honey (adjust to taste) and 1 tsp vanilla extract if using. Whisk well to combine and dissolve the sweetener.

For a smoother texture, transfer the hot milk to a blender and blend on high for 20–30 seconds (use caution with hot liquids), or use an immersion frother for 15–20 seconds to create a lightly frothy surface and fully emulsify spices and ghee. If you prefer not to blend, strain through a fine mesh sieve into serving cups to catch ginger fibers and cardamom husks.

Serve

Pour the golden milk into mugs (about 4 servings from this recipe). Dust each serving with a light sprinkle of ground cinnamon, a tiny pinch of turmeric for color, and a whisper of cracked black pepper.

Serve immediately while warm. Leftovers can be refrigerated up to 3 days; gently reheat on the stove over low heat and whisk before serving.
