Muddle
Place 8–10 fresh mint leaves in a mixing glass or shaker. Add the fresh lemon juice and simple syrup. Gently muddle the mint with a muddler or the back of a spoon just enough to bruise the leaves and release the oils—avoid tearing them into tiny pieces which can add bitterness.
Add spirits and sweet & sour
Pour in 2 oz Maker's Mark bourbon and 0.25 oz sweet & sour mix. Add a handful of crushed ice to the shaker (about 1/2 to 3/4 cup) to start chilling and dilute the cocktail slightly.
Shake
Shake vigorously for about 10–12 seconds until the outside of the shaker feels very cold. This chills and properly dilutes the drink while further integrating the mint flavor.
Prepare glass
Fill a rocks glass or double old-fashioned glass with crushed ice (about 1 cup). If you prefer, you can use the same glass for muddling, but for cleaner presentation use a fresh glass.
Strain and build
Strain the shaken mixture into the prepared glass over the crushed ice. Use a fine strainer if you want to keep mint fragments out, or a Hawthorne/regular strainer if you want more texture.
