Prepare sandwich

Assemble

Lay out 4 slices of bread on a clean surface. If using mayonnaise or mustard, lightly spread on the inside of one or both bread slices (about 1 teaspoon each where indicated). Place one slice of cheddar cheese on two bread slices. Top each cheese slice with two slices of ham. If using tomato, place one very thin tomato slice on top of the ham. Top sandwiches with the remaining bread slices to form two sandwiches.

Butter bread

Spread about 1 tablespoon of softened butter evenly over the outside face of each top and bottom bread slice (about 2 tablespoons total). Make sure corners are covered to get even browning but avoid over-buttering which makes sandwiches greasy.

Grill

Heat a nonstick skillet or griddle over medium heat for about 2 minutes. Place the sandwiches butter-side down in the pan. Cook for 3–4 minutes until the bottom is golden brown and crisp. While the first side cooks, gently press the top of each sandwich with a spatula to help the cheese melt evenly.

Carefully flip each sandwich using a spatula. Cook the second side for another 2–4 minutes until golden brown and the cheese is melted. If the bread is browning too quickly before the cheese melts, lower the heat to medium-low and cover the pan loosely with a lid for 1–2 minutes to trap heat and finish melting the cheese.

Remove sandwiches from the pan and place on a cutting board. Let rest for 1 minute to allow filling to settle and avoid burning little mouths.

Serve

Cut each sandwich diagonally or into fun shapes (strips or halves) for kids. Serve warm. Optional: serve with ketchup, apple slices, baby carrots, or a small cup of applesauce on the side.
