Prepare bread and cheese

Lay out the 8 slices of bread on a clean work surface. Spread about 1/2 tablespoon of softened butter evenly on one side of each slice (buttered side will be the outside of the sandwich). On the unbuttered side of 4 slices, place two slices of cheddar cheese each. If using tomato or ham, place them on top of the cheese. Lightly season the tomato with a pinch of salt and a small grind of pepper if using.

Assemble sandwiches

Top each cheese (and optional filling) with a second slice of bread, buttered side outward, to form four sandwiches. Press gently so the fillings contact evenly with the bread.

Cook on stovetop

Heat a large nonstick or cast-iron skillet over medium-low to medium heat for 1–2 minutes. Place two sandwiches in the skillet (do not overcrowd). Cook for 3–4 minutes on the first side until the bread is golden brown and the cheese begins to melt. Reduce heat if the bread browns too quickly. Carefully flip each sandwich with a spatula and cook another 2–3 minutes on the second side until golden brown and the cheese is fully melted. Repeat with remaining sandwiches. Total cook time per sandwich is about 5–7 minutes.

Optional: press for quicker melt

For faster, more even melting, press each sandwich gently with a spatula while cooking, or place a heavy skillet on top for 30–60 seconds during each side's cooking time (use caution and keep handle position safe).

Rest and cut

Remove sandwiches to a cutting board and let rest 1 minute (prevents hot cheese from running). Using a sharp knife, cut each sandwich diagonally into two triangles for easy eating for kids.

Serve warm with optional sides like apple slices, carrot sticks, or ketchup/mustard for dipping.
