Chill glass

Place a coupe or flute in the freezer or fill with ice water while you prepare the cocktail so the glass is well chilled.

Combine base ingredients

In a cocktail shaker filled halfway with ice, pour 2 oz Carano (or bianco vermouth), 0.5 oz gin (if using), 0.25 oz fresh lemon juice, 0.25 oz simple syrup, and 2 dashes of orange bitters.

Shake

Shake vigorously for 10–12 seconds until the shaker is cold to the touch. This chills and slightly dilutes the mixture and integrates the citrus and sweetener.

Strain

Discard the ice or water from the chilled glass. Double-strain the shaken mixture into the chilled coupe or flute using a Hawthorne and fine strainer to remove small ice shards and citrus pulp.

Top with Ferrari sparkling wine

Carefully top the strained cocktail with 3 oz dry sparkling wine (Ferrari prosecco or Franciacorta) poured slowly down the side of the glass to preserve effervescence.

Garnish and serve

Twist an orange peel over the drink to express the oils, rub it on the rim if desired, and drop it into the cocktail as a garnish. Serve immediately while sparkling.
