Method

Prep cheeses

Bring cheeses to temperature

Remove all cheeses from the refrigerator 30–60 minutes before serving so flavors and textures open up. Soft cheeses (brie, goat cheese) should be slightly chilled but spreadable; hard cheeses (Manchego, cheddar) should be at room temperature for full flavor.

Cut and arrange firm cheeses

Cut the Manchego into 1/4-inch slices or small wedges (about 8 oz yields 12–16 pieces). Cut the aged cheddar into 1/4-inch slices or 1/2-inch cubes (6 oz yields about 12–16 bite-sized pieces). Fan the slices or arrange wedges so guests can easily pick them up.

Prepare soft cheeses

Place the whole Brie on the board; score the rind lightly in a crosshatch or make a small wedge cut to invite guests to serve themselves. Put the goat cheese log on the board whole or slice into 1/2-inch rounds; you may leave a small spreader in it.

Prep blue cheese

Crumble or break the blue cheese into bite-sized chunks and place in an open spot on the board; offer a small knife for guests to portion.

Slice the baguette into thin diagonal slices (about 1/4-inch). If you prefer warm crostini, brush slices lightly with olive oil and toast in a 375°F (190°C) oven for 6–8 minutes until golden. Arrange crackers and bread slices in small stacks or fanned groups for easy access.

Spoon fig jam into one small bowl and honey into another small bowl. Place the bowls on the board with small spoons or honey dipper so guests can add to their cheese. Position spreads near cheeses that pair well (fig jam near Manchego/Brie; honey near goat cheese/blue).

Prep fruits, nuts & extras

Wash and dry grapes; cluster small bunches and place around the cheeses to create visual interest. Halve larger dried apricots if desired and scatter near soft cheese for texture contrast.

Place Marcona almonds and walnut halves in small piles or shallow bowls. Scatter cornichons near the blue cheese and cheddar for a briny counterpoint.

Crack fresh black pepper directly over the goat cheese log (to taste, about 1 tsp) and leave a small pepper grinder nearby if you want guests to add more.

Assemble and garnish

Choose a large wooden board or platter. Start by positioning the cheeses with space between them so accompaniments can be placed around each. Place bowls (jam, honey) first so they anchor the layout.

Arrange breads and crackers to one side and in front of cheeses. Fill in gaps with grapes, dried apricots, nuts, and cornichons. Tuck rosemary sprigs around the board for fragrance and visual appeal.

Label cheeses with small cards if desired, and place a dedicated knife or spreader with each cheese (soft spreader for Brie/goat cheese, narrow knife for blue, sturdy knife for Manchego/cheddar).
