Method
Prepare Leaves & Base
Gently wash the paan leaves under cold running water to remove any dirt. Pat them dry with a clean towel and lay them flat on a tray with the stem end pointing in the same direction.
If the leaves are large and thick, use a small knife to trim the coarse stem so the leaf folds easily without tearing.
Lightly brush each leaf with a few drops of rose water on the inner surface; this adds fragrance and prevents the khoya from sticking.
If using edible silver leaf (varak), keep it ready to place on the leaf just before adding the filling.
Make Sweet Filling
Add Flavorings
Stir in the gulkand, crushed toasted fennel, cardamom powder, chopped nuts, tutti-frutti, and optional sweetened coconut. Mix until the filling is evenly colored and aromatic. Taste and adjust sweetness with more powdered sugar or gulkand if needed.
Portion Filling
Divide the filling into 8 equal portions (about 1 tablespoon each). Roll each portion into a small oval or log that will sit comfortably on a paan leaf without overstuffing.
Assemble Sweet Paan
Place a paan leaf flat, shiny side down (matte side up). If using varak, carefully place a thin piece on the center of the leaf now.
Put one portion of the prepared khoya-gulkand filling near the stem end of the leaf but slightly off-center so the leaf can be folded neatly. Add a small piece of glacé cherry, a sprinkle of chopped nuts and a pinch of mukhwas or pomegranate seeds on top of the filling, if using.
Fold the bottom stem part of the leaf up over the filling, then fold both sides inward to form a neat triangular or cone shape. Tuck the top flap under to secure. If necessary, use a toothpick to hold the fold in place for presentation; remove before eating.
Repeat for all leaves and place assembled paans on a serving platter. If desired, place a decorative silver leaf on top of each assembled paan and press lightly so it adheres.
Serve & Store
Serve immediately as a palate-cleanser or after-meal sweet. Sweet paan is meant to be chewed, enjoyed for flavor, and then expectorated (as culturally appropriate).
To store, wrap each assembled paan individually in butter paper and keep in an airtight container in the refrigerator for up to 1–2 days. Khoya-based paan is best fresh; bring to room temperature briefly before serving if chilled.
