Combine ingredients

In a blender or large jar, add 2 cups plain whole-milk yogurt, 1/2 cup cold whole milk, 3 tablespoons granulated sugar, 1/4 teaspoon cardamom powder, and a pinch of fine sea salt.

Blend

Secure the lid and blend on medium-high speed for 30–60 seconds until smooth and slightly frothy. If using a whisk or hand-held frother, whisk vigorously for 1–2 minutes to achieve a smooth, airy texture.

Adjust sweetness and consistency

Taste the lassi and add more sugar if desired (add 1/2 tablespoon at a time). If the lassi is too thick, add up to 2 tablespoons more cold milk and blend briefly to reach desired pourable consistency.

Optional Flavor & Garnish

Prepare saffron (optional)

If using saffron, soak a pinch of threads in 1 teaspoon warm milk for 5 minutes to release color and aroma. Add the soaked saffron and milk to the blender during the final 5–10 seconds of blending.

Add rose water (optional)

If using rose water, add 1/2 teaspoon to the lassi and pulse once or twice to incorporate. Be cautious — rose water is potent.

Chill and serve

Fill two tall glasses with ice cubes (about 3 each) or leave lassi chilled without ice. Pour the blended lassi into the glasses. Sprinkle crushed pistachios on top for garnish and serve immediately.
