Prawns & Marinade
Rinse and pat dry the prawns. In a bowl, combine prawns with turmeric, red chili powder, 1 tsp salt and lemon juice. Toss to coat and set aside to marinate for 10–15 minutes.
Chettinad Masala Paste
Add grated coconut to the skillet and toast for another 1–2 minutes until lightly golden. Remove from heat and cool slightly.
Place toasted spice mix, softened shallots, ginger, garlic and curry leaves into a small blender or mortar. Grind to a coarse-smooth paste, adding 1–2 tbs water as needed to reach a thick paste consistency. Set the Chettinad masala paste aside.
Cooking
Add the thinly sliced shallots and slit green chilies. Fry, stirring frequently, until the shallots become translucent and begin to brown at the edges (6–8 minutes).
Add chopped tomato and cook until it softens and oil begins to separate from the mix (3–4 minutes).
Stir in the prepared Chettinad masala paste and cook for 2–3 minutes, stirring frequently so the paste is well incorporated and aromatic. If the paste is very thick, add 1–2 tbs water to loosen.
Add tamarind concentrate and 1/2 tsp salt (adjust to taste). Mix well and simmer for 1 minute.
Increase heat to medium-high and add the marinated prawns in a single layer. Cook undisturbed for 1–1.5 minutes, then stir and cook for another 1–2 minutes until prawns are just cooked through and opaque. Avoid overcooking — total prawn cook time should be about 3 minutes depending on size.
Toss in fresh curry leaves and chopped cilantro. Turn off the heat and give everything a final mix.
Taste and adjust seasoning with more salt or lemon if desired. Serve hot with steamed rice, dosa, or flatbreads.
