Prepare tamarind extract

Soak 2 tablespoons tamarind in 1 cup hot water for 15 minutes. Mash the tamarind with your fingers, strain through a sieve into a bowl to collect about 3/4 to 1 cup tamarind water. Reserve the pulp-free liquid and discard fibers. Add an additional 1 cup water to the reserved tamarind liquid when combining for cooking (total 2 cups).

Par-cook garlic

Smash the peeled garlic cloves lightly with the side of a knife (or leave whole). In a small saucepan, add the garlic and enough water to just cover (about 1/2 cup). Bring to a gentle simmer and cook for 6–8 minutes until garlic is slightly softened but still holding shape. Drain and set aside. This mellows raw bite and prevents garlic from breaking down completely in the gravy.

Combine tamarind and seasonings

In a medium saucepan, combine the tamarind extract (about 2 cups total after adding water), jaggery, salt, and aamchur (if using). Bring to a simmer over medium heat while you prepare the rest of the gravy. Keep warm on low heat.

Spice Paste

Roast whole spices

In a small dry skillet over medium heat, add coriander seeds, fenugreek seeds, and dried red chilies. Dry-roast for 1–2 minutes until fragrant (be careful not to burn the chilies). Remove from heat and let cool slightly.

Make paste

In a blender, add the roasted spice mix, shallots, chopped tomato, and turmeric powder. Add 2–3 tablespoons of water and blend to a smooth paste. If needed, add a little more water to get a smooth consistency. Scrape the paste out and set aside.

Cook the paste

Heat 1 tablespoon oil in a wide pan over medium heat. Add the blended paste and sauté for 6–8 minutes, stirring frequently, until raw smell disappears and the oil begins to separate from the sides of the mixture. This deepens the flavor of the gravy.

Combine with tamarind

Add the prepared tamarind-tamarind water mixture to the cooked paste. Stir well to combine. Bring to a gentle simmer.

Tadka / Tempering

Prepare tempering

In a small tadka pan or skillet, heat remaining 2 tablespoons oil over medium heat. When hot, crackle the mustard seeds. Add cumin seeds, urad dal, chana dal and fry until the dals turn golden brown (about 1–2 minutes). Add broken dry red chili, curry leaves and a pinch of asafoetida and fry for another 15–20 seconds until fragrant.

Finish the kuzhambu

Pour the tempered oil and fried spices into the simmering tamarind-paste mixture. Stir well. Add the par-cooked garlic cloves to the simmering kuzhambu. Adjust heat to medium-low and simmer gently for 10–12 minutes, allowing the garlic to absorb the sauce and the flavors to meld. Taste and adjust salt, jaggery or sourness (add a little more jaggery if too sour or a splash more tamarind water if too mild).

Final simmer and serve

If the kuzhambu is too thin, simmer uncovered for a few more minutes until it reaches desired thickness. Once garlic is tender and sauce has developed a glossy finish, remove from heat. Garnish with a few fresh curry leaves if desired and serve hot with steamed rice, dosai, or idli.
