Prepare saffron (optional)

If using saffron, warm the milk slightly (about 1–2 tablespoons hot milk) and soak the saffron strands in it for 5–10 minutes to release color and aroma. Set aside.

Roast semolina

Heat a heavy-bottomed pan or kadai over medium-low heat. Add 1 tablespoon ghee and swirl. Add 1 cup semolina and roast, stirring continuously, until it becomes fragrant and changes to a slightly nutty scent (2–4 minutes). Do not let it brown too much. Remove semolina to a bowl and keep warm.

Fry nuts and raisins

In the same pan, add remaining 2 tablespoons ghee over medium heat. When hot, add 10 halved cashews and fry until golden. Add 2 tablespoons raisins; they will puff up—stir and fry for 20–30 seconds. Remove nuts and raisins to a small plate and keep aside.

Cook pineapple

Using the same pan, add the chopped pineapple (1 cup). Sauté over medium heat for 3–5 minutes until the pieces soften and start releasing juice. This mellows raw acidity and concentrates sweetness.

Boil liquid

To the pan with pineapple juices, add 1.5 cups water and 0.5 cup milk (including saffron-infused milk if using). Stir and bring the liquid to a gentle boil. Add 0.125 teaspoon salt to balance flavors.

Add semolina

Lower heat to medium-low. Gradually sprinkle the roasted semolina into the boiling liquid in a thin stream, stirring continuously with a whisk or spatula to avoid lumps. Continue stirring until the semolina absorbs the liquid and thickens (about 2–3 minutes).

Sweeten

Add 3 tablespoons sugar to the thickened semolina and mix well. The mixture will loosen slightly as sugar melts—stir for 1–2 minutes on low heat so sugar dissolves completely and combines with pineapple.

Finish with ghee and aromatics

Add the reserved fried cashews and raisins, 0.5 teaspoon cardamom powder, and the remaining ghee drizzle (if any left). Mix thoroughly. Taste and adjust sugar or salt if needed. If saffron was soaked, pour the saffron milk now and gently fold to distribute color.

Set and serve

Cook on very low heat for another 1–2 minutes until the mixture leaves the sides of the pan and reaches a soft, glossy, pudding-like consistency. Turn off heat. Transfer to a serving bowl or individual bowls. Garnish with a few extra toasted cashews or saffron strands if desired. Serve warm or at room temperature.
