Clean the crab thoroughly: remove gills and stomach sac, rinse under cold water. If whole, split into halves or quarters so the meat and shells are exposed for flavor.

In a large pot, add 8 cups water, cleaned crab pieces, turmeric powder and 1 tsp salt. Bring to a boil over high heat, then reduce to medium-low and simmer, covered, for 20 minutes to extract flavor from shells.

After 20 minutes, remove crab pieces onto a plate. Allow to cool slightly. Strain the broth through a fine-mesh sieve into another pot, pressing shells gently to extract liquid. Reserve crab meat by picking from shells and set aside in a small bowl (leave some meat on shells if preferred). Return strained broth to stove and keep at gentle simmer.

Rasam Spice Paste

Dry roast coriander seeds, cumin seeds, black peppercorns, and dry red chilies in a small pan over medium heat for 2–3 minutes until aromatic and just darker — stir constantly to avoid burning. Remove and cool.

In the same pan, lightly roast the toor dal until golden (1–2 minutes) and cool. Add roasted spices, roasted toor dal, garlic cloves, and roasted mixture to a blender. Add 1/2 cup water and tamarind paste. Grind to a smooth slightly coarse paste, adding a little more water if needed.

Taste the paste and adjust salt if necessary. Set aside.

For Tempering and Finishing

To the simmering crab broth, add chopped tomato, slit green chilies, and the rasam spice paste. Stir to incorporate and bring to a gentle simmer. Cook for 6–8 minutes so tomato softens and flavors meld.

Add sambar or rasam powder and remaining 0.5 tsp salt (adjust to taste) to the pot. Stir well and simmer for another 3–4 minutes. Taste and correct seasoning and tang — add more tamarind paste or lemon juice if needed for brightness.

Temper (Tadka)

Heat ghee or oil in a small tadka pan over medium heat. Add mustard seeds and let them pop. Add fenugreek seeds (if using) and allow to sizzle briefly. Add asafoetida, fresh curry leaves and sliced green chilies; fry for 10–15 seconds until aromatic but not burned.

Pour the hot tempering immediately into the simmering rasam. Stir once. Add reserved crab meat and simmer for 2–3 minutes just to heat the meat through and allow flavors to marry. Do not overcook crab meat or it will become rubbery.

Turn off heat. Stir in chopped fresh coriander and lemon juice. Cover and let rest for 2 minutes.

Serve hot in bowls as a soup or with steamed rice. Adjust garnish with extra coriander or a squeeze of lemon as desired.
