Meat & Marinade
Marinate mutton
In a large bowl combine mutton pieces with yogurt, ginger-garlic paste, turmeric, red chili powder and 1 tsp salt. Mix thoroughly so each piece is coated. Cover and refrigerate for at least 1 hour, preferably 3–4 hours or overnight for best tenderness and flavor.
Ground spice mix (sukka masala)
Dry roast spices
Heat a small, dry skillet over medium heat. Add grated/dessicated coconut and dry roast, stirring, until light golden and fragrant (about 3–4 minutes). Remove and set aside. In the same skillet, add coriander seeds, cumin seeds, fennel seeds, black peppercorns and torn dry red chilies. Toast gently until aromatic (2–3 minutes). Cool slightly.
Grind to paste
Transfer toasted coconut and spices to a spice grinder or small blender. Add poppy seeds if using. Grind to a coarse paste, adding 1–2 tsp water if necessary. Set aside the sukka masala paste.
Cooking base
Sauté whole spices and onions
Heat oil or ghee in a heavy-bottomed large pan or Dutch oven over medium heat. When hot, add mustard seeds and let them splutter, then add cumin seeds, cinnamon stick, cardamom, cloves and bay leaves. Sauté for 30 seconds until fragrant. Add sliced onions and a pinch of salt. Cook, stirring occasionally, until onions are deep golden brown and caramelized (15–20 minutes). This step builds the base flavor—be patient and lower heat if onions are browning too fast.
Add aromatics
Add green chilies and curry leaves, sauté for 1 minute. Then add ginger-garlic paste (if any remains) and cook for 1–2 minutes until raw smell disappears.
Combine & cook mutton
Brown the marinated mutton
Increase heat to medium-high. Add the marinated mutton pieces to the pan in a single layer (work in batches if necessary) and sear for 4–6 minutes, turning pieces so they brown on most sides. Browning adds depth of flavor.
Add tomatoes and powdered spices
Stir in the chopped tomatoes and cook until they break down and become pulpy, about 6–8 minutes. Add coriander powder and remaining red chili/turmeric if needed. Cook until oil begins to separate from the masala (3–4 minutes).
Add sukka masala paste
Stir in the ground sukka masala paste and mix well to coat the mutton. Cook for 3–4 minutes so the raw aroma of the roasted ground spices is gone.
Add water and simmer
Pour in about 300 ml water (or enough to just cover the pieces partially) and scrape up any browned bits from the pan. Bring to a gentle boil. If using a pressure cooker, transfer mixture to cooker, close lid and cook for 15–20 minutes after first whistle (depending on mutton tenderness). If using the pan, reduce heat to low, cover and simmer gently for 1–1.25 hours, stirring occasionally, until mutton is tender and sauce is reduced to a thick, semi-dry consistency. Add more water if needed while cooking.
Final seasoning
Once mutton is tender and the masala has reached desired consistency, check seasoning and add remaining salt to taste. Stir in garam masala, crushed kasuri methi and amchur powder (or lemon juice). Cook another 2 minutes to meld flavors.
Finish and garnish
Turn off heat and sprinkle chopped fresh coriander leaves. Optionally drizzle 1 tsp ghee for richness. Let rest covered for 5 minutes before serving.
