Soak
Rinse the raw rice, parboiled rice, and poha under cold water until the water runs clear. Combine the raw rice, parboiled rice and poha in a bowl. Rinse the urad dal separately until water runs clear and place in another bowl. Add fenugreek seeds to the urad dal bowl. Cover both bowls with water and soak for 4–6 hours at room temperature.
Grind
Drain the soaked urad dal and fenugreek seeds. Reserve some soaking water. In a wet grinder or high-speed blender, grind the urad dal plus a few tablespoons of reserved water to a smooth, airy batter (about 6–8 minutes in a wet grinder). Transfer to a large mixing bowl. Drain the rice/poha mixture and grind with enough reserved water to make a slightly coarse, smooth batter (not pudding-smooth — a little grainy is fine). Combine the rice batter with the urad dal batter. The combined batter should be pourable but slightly thick (similar to pancake batter). Stir thoroughly to incorporate air.
Ferment
Cover the bowl and keep in a warm place (around 28–32°C / 82–90°F) for 8–12 hours or overnight until the batter has risen and shows bubbles and a mildly sour aroma. In cooler climates, ferment 12–16 hours or use a warm oven with the light on to maintain temperature.
Final season and consistency
After fermentation, gently stir the batter. Add 1 to 1.5 teaspoons of salt (adjust to taste) and 2–4 tablespoons of water if needed to reach a thin, pourable consistency for dosa (should coat the back of a ladle and spread easily on the pan). Do not over-stir or overmix.
Masala (potato filling)
Temper and sauté aromatics: Heat 2 tablespoons oil or ghee in a wide skillet over medium heat. Add mustard seeds and let them pop. Add cumin seeds, urad dal and chana dal (if using) and sauté until the dals turn golden brown. Add a pinch of asafoetida, curry leaves, chopped green chilies, grated ginger and sliced onion. Sauté for 3–4 minutes until onions are translucent and fragrant.
Spice and combine: Add turmeric powder and salt, stir briefly. Add the mashed potatoes to the skillet and toss to combine with the tempered spices and onions. Cook for 3–5 minutes, pressing the potatoes gently so they absorb the flavors. Adjust salt to taste.
Finish masala: Remove from heat. Stir in chopped cilantro and lemon juice. Keep the potato masala warm or at room temperature until ready to assemble dosai.
For cooking & serving
Spread batter: Stir the fermented batter once. Ladle about 1/3 to 1/2 cup of batter (adjust depending on pan size) onto the center of the hot pan and quickly spread it outward in a circular motion with the back of the ladle to form a thin crepe (about 8–10 inches). If batter is too thick, add a tablespoon of water to batter and mix before spreading the next dosa.
Drizzle oil: Drizzle about 1/2 to 1 teaspoon of oil or ghee around the edges and a few drops on top. Cook over medium heat until the edges lift and the bottom turns golden brown and crisp (2–3 minutes).
Add masala: Place 1/3 to 1/2 cup of the prepared potato masala in a line across the center of the dosa. Optionally fold one side over the masala or roll the dosa from one edge to the other.
Portion guidance: This recipe yields approximately 8–10 medium dosai depending on pan size — serve immediately for best crispness.
