For the Eggplant and Main Curry
Prepare eggplants
Wash the eggplants and cut into 1–1.5 inch pieces. If the eggplants are seedy or large, you may lightly salt the cut pieces and set aside for 10 minutes, then rinse and pat dry to reduce bitterness and excess moisture.
Heat 3 tbs oil in a deep skillet or kadhai over medium heat. Add 1 tsp mustard seeds; when they begin to pop, add 1 tsp fenugreek seeds and 10 curry leaves. Fry briefly until aromatic (about 20–30 seconds).
Add the chopped tomatoes, 1 tsp turmeric, 1 tsp Kashmiri chili powder, 2 tsp coriander powder and 1.25 tsp salt. Cook, stirring occasionally, until tomatoes break down and the oil begins to separate from the masala, about 6–8 minutes. Add 1 cup water if the mixture becomes too dry.
Add the eggplant pieces and stir gently to coat them with the masala. Cover and cook on medium-low for 8–10 minutes, stirring once halfway, until eggplant is tender but not falling apart. If the mixture dries out, add up to 1/4 cup water as needed.
Stir in the tamarind pulp (3 tbs) and jaggery (if using). Mix gently and simmer uncovered 3–4 minutes to blend the sourness. Taste and adjust salt or tamarind—add a little more water if you prefer a thinner kulambu (gravy).
For the Fresh Coconut Masala (Grinding)
While the eggplant cooks, combine 3 tbs fresh/desiccated coconut, 2 tbs roasted chana dal, 1/2 tsp cumin seeds, 6 black peppercorns, and the small piece of jaggery (if using) in a small blender or spice grinder.
Add 2–3 tbs warm water and grind to a smooth, slightly coarse paste. Scrape down the sides to ensure even grinding; the paste should be thick but pourable. If too stiff, add water 1 tsp at a time.
When the eggplant is tender and the tamarind has been incorporated, stir the coconut-chana dal paste into the curry. Mix gently to combine, bring to a gentle simmer, and cook 3–4 minutes so the rawness of the coconut cooks away and flavors meld.
For Tempering (Final)
In a small pan, heat 1 tbs oil or ghee over medium heat. Add 1/2 tsp mustard seeds and wait until they pop. Add 8 curry leaves and 1 broken dry red chili (if using). Fry for 20–30 seconds until crisp and aromatic.
Pour this hot tempering immediately over the finished kulambu. Cover the pot for 1 minute to trap the aroma, then stir lightly.
Adjust seasoning (salt, jaggery/tamarind) to taste. Serve hot with steamed rice, dosa, or idli.
