Marinade & Chicken
Prepare marinade
In a large bowl combine yogurt, ginger-garlic paste, red chili powder, turmeric, coriander powder, cumin powder, black pepper, garam masala, salt, lime juice and 3 tbs oil. Mix to a smooth marinade.
Add the boneless chicken pieces to the marinade, toss so each piece is well coated. Cover and refrigerate for at least 2 hours, preferably overnight for best flavor penetration.
Whole spices & tempering
Add curry leaves and slit green chilies; sauté 15–20 seconds more. Be careful not to burn the spices.
Onions, tomatoes & herb base
Add chopped tomatoes and cook until they soften and oil begins to separate from the masala (about 5–6 minutes).
Stir in chopped coriander and mint (reserve half of each for layering), then add the marinated chicken. Increase heat to medium-high and cook the chicken for 6–8 minutes, stirring occasionally, until it is mostly cooked and the masala thickens. Adjust salt if necessary.
Rice & par-cooking
Rinse the rice under cold water until water runs clear. Soak rice for 20–30 minutes, then drain.
Bring 1.4 liters water to a rolling boil in a large pot. Add 2 tsp salt and 4–5 whole spices (a couple of cardamoms, a small piece of cinnamon, 1–2 cloves) if desired. Add the drained rice and cook until the grains are about 70% done — they should have a slight bite (approximately 6–8 minutes depending on rice). Drain the rice in a colander and spread briefly to stop cooking.
If using saffron, stir saffron-soaked warm milk and remaining lemon juice into the par-cooked rice for aroma and color.
Assembling & Dum (final cook)
Seal the pot tightly for dum: place a sheet of parchment or aluminum foil over the pot mouth, then fit the lid to create a good seal (or seal with a dough band if available). Alternatively, use a heavy lid and wrap with a clean kitchen towel.
After 20–25 minutes, turn off heat and let the biriyani rest, sealed, for 10 minutes to settle flavors.
