Rinse and soak

Rinse the dal under running water until the water runs clear (3–4 rinses). Optional: soak the dal in cold water for 20–30 minutes to reduce cooking time and improve texture; drain before cooking.

Cook the dal

Combine the rinsed dal, 4 cups water, turmeric, and 1/2 tsp salt in a pressure cooker or pot. If using a pressure cooker, cook for 3–4 whistles on medium heat (about 15 minutes total including pressurizing) until dal is tender and breaks easily. If using a pot, simmer covered for 30–40 minutes, stirring occasionally and adding water if needed, until dal is soft.

Mash and adjust

Once cooked, open the cooker after natural pressure release or remove from heat if using a pot. Use a ladle or whisk to lightly mash the dal to your preferred consistency (some texture is nice). If the dal is too thick, add up to 1/2 cup hot water and stir to reach a slightly loose, pourable texture. Taste and adjust salt to 1 tsp total.

Stir the chopped tomato into the hot dal and simmer 3–4 minutes so the tomato softens and integrates. This step helps meld flavors before adding the tadka.

Heat fat and seeds

Heat a large skillet or small saucepan over medium heat. Add ghee or oil and butter (if using). When hot, add cumin seeds and mustard seeds. Let them sizzle and pop for 10–15 seconds, being careful not to burn.

Add aromatics

Add asafoetida, then add the finely chopped onion. Sauté on medium heat until onions turn translucent to light golden, about 6–8 minutes. Add minced garlic and ginger and sauté 1–2 minutes until fragrant. Add slit green chilies and cook 30 seconds more.

Spice the tadka

Reduce heat slightly and add red chili powder, coriander powder, cumin powder, and a pinch of salt. Cook the spice mix for 30–45 seconds to bloom the flavors, stirring constantly so spices don't burn.

Combine with dal

Pour this hot tadka mixture into the simmering dal. Stir thoroughly so the tempered aromatics distribute evenly. Simmer the combined dal and tadka together for 3–5 minutes over low heat to marry flavors. If the dal thickens too much, add up to 1/2 cup hot water to reach desired consistency.

Finish and garnish

Stir in garam masala and crushed kasuri methi (if using). Remove from heat, then stir in chopped cilantro and lemon juice. If using, swirl in fresh cream or yogurt for extra richness. Taste and adjust salt, lemon, or spices as needed.

Serve

Ladle dal fry into a serving bowl and optionally finish with a small drizzle of ghee on top and a few cilantro leaves. Serve hot with steamed basmati rice, jeera rice, or Indian breads like roti or naan.
