Clean and Marinate
Rinse the crabs well under cold water. Remove gills and guts, crack the claws slightly with the back of a knife and cut the body into halves or quarters so the marinade penetrates. In a bowl, combine 1.5 tsp salt, 0.75 tsp turmeric, 2 tbs ginger paste, 1 tbs garlic paste and 1 tbs lemon juice. Rub marinade thoroughly over the crab pieces, into joints and cavities. Cover and refrigerate for 20–30 minutes while you prepare the masala.
Chettinad Masala (spice mix)
Dry Roast and Grind
Heat a small skillet over medium heat. Dry-roast 6 dried red chilies, 2 tbs coriander seeds, 1 tsp cumin seeds, 1 tsp fennel seeds, 1 tsp black peppercorns, 1 inch cinnamon, 4 cloves, 4 green cardamom pods and 6 curry leaves (if using) until fragrant and slightly darkened — about 2–3 minutes. Remove and cool slightly, then grind to a fine powder in a spice grinder or mortar and pestle. Set aside 2 tbs of this powder for the gravy and reserve any extra for serving.

Temper and Sauté
Heat 4 tbs oil in a heavy skillet or kadhai over medium-high heat. Add 1 tsp mustard seeds and when they begin to pop add 0.25 tsp fenugreek seeds (if using), 2 slit green chilies and 2 tbs julienned ginger. Fry for 30 seconds to bloom the aromatics. Add 1 large finely sliced onion and sauté until golden brown, about 8–10 minutes, stirring often to avoid burning.
Add 2 finely chopped tomatoes and cook until they break down and the oil begins to separate from the mixture, about 6–8 minutes.
Stir in 2 tbs of the freshly ground Chettinad masala powder and 1 tbs tamarind pulp (or concentrate). Cook the spices with the tomato-onion base for 2 minutes to remove rawness.
Add the marinated crab pieces to the pan, arranging them so the shells contact the hot base. Increase heat to medium-high and sear crab for 2 minutes on each side to develop color.
Pour in 0.5 cup water and 0.5 cup coconut milk (if using). Gently fold the crab into the sauce so the masala coats all pieces. Bring to a simmer, then reduce heat to medium-low, cover partially and cook for 10–12 minutes, turning crab once halfway so the masala infuses evenly.
Uncover, add 1 tsp salt and 0.5 tsp sugar. If sauce is too thin, increase heat and reduce for 3–4 minutes until slightly thickened; if too thick, add up to 2–4 tbs water. Taste and adjust seasoning.
Garnish with 2 tbs chopped cilantro and serve hot.
