Prepare Lentils

Rinse and cook dal

Rinse 1 cup toor dal thoroughly under running water until water runs clear. Combine rinsed dal and 2.5 cups water in a medium saucepan or pressure cooker with 1/2 tsp turmeric. If using a pressure cooker, cook for 3–4 whistles until dal is soft but not completely mushy. If using a saucepan, simmer covered 20–25 minutes, stirring occasionally, until tender. Mash lightly with the back of a spoon to create a creamy but slightly textured dal. Set aside.

Cook Vegetables

In a separate pot, bring about 1 cup of water to a boil. Add the cubed chayote and optional potato, 1/2 tsp turmeric, and a pinch of salt. Reduce heat and simmer until vegetables are tender but not falling apart, about 8–10 minutes. Drain any excess water and keep vegetables hot.

Alternatively, you may steam the vegetables until fork-tender (8–10 minutes). Reserve any cooking liquid to adjust final consistency if needed.

Make Coconut-Cumin Paste

In a small blender or mortar and pestle, combine 3 tbs grated coconut and 1 tsp cumin seeds. Add 2–3 tablespoons of water and grind to a smooth paste. If the paste is too thick, add a little more water; the paste should be pourable but creamy.

Combine Dal, Vegetables & Paste

Bring the cooked dal back to medium-low heat in the saucepan. Add the cooked chayote (and potato if using) to the dal. Stir gently to combine.

Add the coconut-cumin paste to the dal-vegetable mixture. Stir in 3/4 to 1 tsp salt (adjust to taste) and simmer gently for 4–5 minutes so flavors meld. If the mixture is too thick, add reserved vegetable cooking liquid or warm water, 2 tbs at a time, to reach a creamy, slightly loose consistency typical of kootu.

Taste and adjust seasoning. Remove from heat and stir in 1 tsp fresh lime juice if using.

Prepare Tempering (Tadka)

Heat 2 tbs oil in a small skillet over medium heat. When hot, add 1 tsp mustard seeds. When the seeds start to pop, add 1 tsp urad dal and 1 tsp fenugreek seeds (if using). Fry the dal until it turns golden brown and aromatic, about 30–45 seconds.

Add the broken dry red chili, 8 curry leaves, and a pinch of asafoetida. Fry briefly (10–15 seconds) until the chili darkens slightly and the curry leaves become crisp. Immediately pour the hot tempering over the prepared dal-chayote mixture.

Finish & Serve

Give the kootu a gentle stir to distribute the tempering and check seasoning one last time. Garnish with chopped cilantro and an extra tablespoon of grated coconut if desired.

Serve warm with steamed rice, dosa, or roti. Leftovers keep in the refrigerator for up to 3 days; reheat gently and add a splash of water if it thickens.
