Batter
Soak dal
Rinse the urad dal thoroughly until the water runs clear. Soak the dal in enough water for 4–6 hours or overnight.
Grind dal
Drain the soaked dal. In a wet grinder or high-speed blender, grind the dal with 2 tablespoons of water to a smooth, fluffy paste. Stop occasionally to scrape down sides. The batter should be light and slightly airy — add up to 1 additional tablespoon of water only if needed to achieve a thick but spreadable consistency.
Prepare beetroot and mix
Squeeze excess moisture from the grated beetroot using your hands or a clean kitchen towel; reserve any liquid if desired for other uses. Fold the grated beetroot into the urad dal batter. Add rice flour to help bind and absorb moisture.
Season batter
Add chopped green chilies, grated ginger, chopped curry leaves, fennel seeds (if using), a pinch of asafoetida and salt. Mix thoroughly. The batter should be thick enough to hold its shape when spooned; if it's too loose, add up to 1 more tablespoon rice flour. Taste a tiny bit of batter (optional) to check seasoning.
Rest
Let the mixed batter rest for 10–15 minutes at room temperature; this helps flavors meld and rice flour hydrate, improving binding.
Frying & Finishing
Heat oil
Pour vegetable oil into a deep frying pan or kadhai to a depth of about 1–1.5 inches (2.5–4 cm). Heat over medium flame until oil reaches 350°F (175°C) or a small batter drop sizzles and rises steadily without browning immediately.
Shape vadai
Wet your hands or a tablespoon to prevent sticking. Take a heaped tablespoon of batter, flatten slightly into a disc (about 2–3 inches / 5–7 cm across). You can make small thumb impressions in the center to form a shallow cup. Repeat to form remaining vadai. Keep portions uniform for even frying.
Fry vadai
Gently slide 4–5 vadai into the hot oil, do not overcrowd. Fry on medium heat, turning occasionally, until edges turn crisp and deep golden brown, about 3–4 minutes per side (total 6–8 minutes) depending on size and oil temperature. Adjust heat to prevent burning — lower if browning too fast.
Drain
Using a slotted spoon, remove vadai and drain on paper towels or a wire rack. Sprinkle a tiny pinch of salt over hot vadai if desired.
Repeat
Fry remaining batter in batches, allowing oil to return to temperature between batches.
Garnish & Serve
Transfer vadai to a serving platter. Garnish with chopped coriander leaves and serve hot with lemon wedges, coconut chutney or tomato chutney as preferred.
