Boil eggs

Place 6 eggs in a medium saucepan and cover with cold water (about 1.5 l). Add 1 tsp salt. Bring to a rolling boil over high heat, then reduce heat to medium and simmer 9 minutes for fully set yolks. Remove from heat and immediately transfer eggs to an ice bath or run under cold water for 5 minutes to stop cooking and make peeling easier.

Peel and slice

Gently tap each egg on a hard surface and peel the shell. Rinse to remove shell fragments. Slice each egg lengthwise or into 1/2-inch rounds, set aside on a plate covered with a paper towel.

Masala gravy

Prepare aromatics

Heat 3 tbs oil in a heavy skillet or kadhai over medium heat until shimmering. Add 1 tsp cumin seeds and 1 tsp mustard seeds. When they begin to pop (about 20–30 seconds), add 10 curry leaves and sauté for 10 seconds until fragrant.

Cook onions, ginger and garlic

Add 1 cup thinly sliced onion to the pan. Sauté on medium heat, stirring occasionally, until soft and lightly golden, about 6–8 minutes. Add 1 tsp chopped ginger, 1 tsp crushed garlic and 2 slit green chilies. Cook for 1–2 minutes until raw aroma disappears.

Add tomatoes and spices

Stir in 2 cups finely chopped tomatoes. Cook the mixture until the tomatoes break down and oil begins to separate around the edges, about 8–10 minutes. Add 1 tsp red chili powder, 1 tsp turmeric powder, 2 tsp coriander powder and 1 tsp salt. Mix well and cook 2–3 minutes to bloom the spices. If the mixture becomes too thick or sticks, add up to 1/2 cup water to loosen.

Simmer the gravy

Lower the heat and simmer the tomato-onion masala for 4–5 minutes, stirring occasionally, until it reaches a thick but saucy consistency. Taste and adjust salt and spice. Stir in 1/2 tsp garam masala and 2 tbs chopped cilantro. Finish with 1 tsp lemon juice for brightness.

Optional smooth finish

If you prefer a smoother gravy similar to some Anjappar styles, cool the masala slightly and pulse briefly in a blender (use caution with hot liquids) to a coarse puree, then return to the pan and reheat gently. Adjust water to reach desired consistency.

Assemble & serve

Place the sliced boiled eggs decoratively on a shallow serving dish or individual plates.

Spoon the hot tomato-onion masala over the sliced eggs so the gravy covers the eggs evenly. Use a slotted spoon to drain excess oil if desired so gravy sits nicely on top.

Garnish with 1–2 tbs fried shallots or onions (if using) and sprinkle remaining fresh cilantro leaves. Serve warm with steamed rice, dosa, idli, or Indian breads.
