Making the Pie Crust

In a large bowl, combine the flour, sugar, and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs. Stir in the ice water, a tablespoon at a time, until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Preparing the Filling

In another bowl, combine the fresh fruit, cornstarch, cinnamon, and lemon juice. Mix gently until the fruit is well coated.

Assembling the Pie

Preheat your oven to 425°F (220°C). Roll out one disk of dough on a floured surface to fit your pie dish. Place the rolled-out dough in the pie dish and fill it with the prepared fruit filling. Roll out the second disk of dough and place it over the filling. Cut slits in the top crust for steam to escape. Brush with beaten egg.

Baking

Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for 30-35 minutes, or until the crust is golden and the filling is bubbly. Allow to cool before serving.
