Remove the bone-in filet mignon from the refrigerator and allow it to come to room temperature for about 30 minutes. This ensures even cooking.

Rub each filet with olive oil, then season generously with kosher salt, black pepper, and garlic powder. Make sure to cover all sides.

Preheat your grill to high heat, about 450°F (232°C). If using a charcoal grill, ensure the coals are evenly distributed.

Place the seasoned filets on the grill. For medium-rare, grill for about 4-5 minutes on one side, then flip and grill for an additional 3-4 minutes on the other side.
