Wash and prepare seasonal fruit. If using peaches or stone fruit, remove pits; if using berries, hull or remove stems as needed.
Puree the fruit until smooth to yield about 4 cups of puree. If you prefer an ultra-smooth texture, strain the puree through a fine-mesh sieve to remove seeds or pulp.
Make a simple syrup: in a small saucepan, combine granulated sugar and water. Bring to a gentle simmer, stirring until the sugar dissolves completely. Remove from heat and cool to room temperature.
In a large bowl, whisk together the fruit puree, cooled simple syrup, lemon juice, and salt until well combined.
Chill the sorbet base in the refrigerator for at least 2 hours, or overnight for deeper flavor.
Churn the chilled base in an ice cream maker according to the manufacturer's instructions, about 20-25 minutes, until thick and scoopable.
