Cooking the Quinoa

Rinse the Quinoa

Begin by rinsing the quinoa under cold water in a fine mesh strainer to remove its natural coating, called saponin, which can be bitter.

Cook the Quinoa

In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let simmer for 15-20 minutes or until the quinoa is fluffy and the liquid is absorbed.

Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then, add the diced bell pepper, zucchini, and cherry tomatoes. Season with salt and pepper, and cook for 5-7 minutes until the vegetables are tender.

Mix Everything Together

Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Toss to combine everything well.
