Grilling and Sauce Preparation
Prepare the Calamari
In a large bowl, toss the cleaned calamari rings with olive oil, salt, pepper, and minced garlic. Let it marinate for about 15 minutes.
Grill the Calamari
Preheat your grill to medium-high heat. Thread the calamari onto skewers (if using wooden skewers, soak them in water for about 30 minutes before using) and grill for about 2-3 minutes on each side until they are opaque and slightly charred.
Prepare the Lemon Butter Sauce
In a saucepan over medium heat, melt the butter. Add the diced tomatoes, capers, and lemon juice. Stir well and cook for about 5 minutes until heated through.
Serve
Remove the calamari from the grill and place them on a serving platter. Drizzle the lemon butter sauce over the grilled calamari and garnish with fresh parsley.
