Beat eggs

Crack the 3 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Whisk vigorously until the mixture is homogenous and slightly frothy, about 20–30 seconds. This adds air for a tender omelette.

Preheat pan

Place a 9–10 inch nonstick skillet over medium heat. Add 1/2 teaspoon neutral oil and 1 tablespoon unsalted butter. Heat until the butter foams and just begins to turn a pale gold, about 1–2 minutes. Swirl to coat the pan evenly.

Prepare vegetables

While the pan heats, rinse 1 cup baby spinach and pat dry. Thinly slice 1/2 cup fresh mushrooms (about 4–5 small mushrooms). Dice the vine-ripe plum tomato into small pieces, remove excess seeds and juice so the omelette doesn't become soggy (reserve about 2 tablespoons of diced tomato). Shred 1/2 cup sharp cheddar cheese and roughly chop 1 tablespoon chives if using.

Sauté mushrooms and wilt spinach

When the butter is hot, add the sliced mushrooms to the skillet. Sauté over medium heat, stirring occasionally, until mushrooms give up moisture and begin to brown, about 3–4 minutes. Add the baby spinach and a pinch of salt, then cook another 30–45 seconds until just wilted. Transfer the mushrooms and spinach to a plate and set aside. Wipe the pan lightly with a paper towel if excess moisture remains.

Cook omelette

Reduce heat to medium-low. Pour the beaten egg mixture into the skillet and let it sit, undisturbed, for about 10–15 seconds until edges begin to set. Using a heatproof spatula, gently pull the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Continue this motion for about 30–45 seconds until the eggs are mostly set but still slightly glossy on top.

Add fillings

Evenly distribute the sautéed mushrooms and spinach across one half of the omelette. Sprinkle the diced plum tomato (drained of excess juice) over the vegetables, then top with the 1/2 cup shredded cheddar cheese.

Fold and finish

Using the spatula, gently fold the empty half of the omelette over the filled half. Let it cook for another 30–60 seconds so the cheese melts and fillings heat through. If you prefer a firmer interior, cover the pan for 30–45 seconds on very low heat. Slide the omelette onto a plate, seam-side down.

Garnish and serve

Sprinkle chopped chives over the omelette (optional). Taste and adjust seasoning with a little extra salt and pepper if needed. Serve immediately.
