    Preheat and prepare

    Preheat oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper or a silicone mat. Measure out nuts and set aside.

    Spread the mixed nuts in an even layer on the prepared baking sheet. Toast in the preheated oven for 8–10 minutes, tossing once halfway through, until fragrant and just beginning to color. Remove from oven and allow to cool slightly. Keep oven on.

    Make the coating sauce

    In a medium skillet or small saucepan over medium heat, melt the butter. Add brown sugar and maple syrup and whisk until sugar dissolves and mixture is bubbling gently, about 1–2 minutes. Stir in soy sauce, smoked paprika, garlic powder, onion powder, black pepper, cayenne, kosher salt, and vanilla. Simmer for 30–60 seconds until cohesive and glossy, stirring constantly to prevent burning. Remove from heat.

    Coat the nuts

    Immediately transfer the toasted nuts to a large heatproof bowl. Pour the warm coating sauce over the nuts and use a silicone spatula to fold and coat every nut evenly. Work quickly so the glaze covers the nuts before it sets.

    Bake to set the glaze

    Return the coated nuts to the lined baking sheet, spreading them into a single layer (some clumps are fine). Bake at 325°F (160°C) for 10–12 minutes, stirring once at the halfway point to promote even coating. Watch carefully near the end so the sugar does not scorch.

    Cool and separate

    Remove the baking sheet from oven and allow nuts to cool completely on the sheet — 20–30 minutes. As they cool the glaze will harden. Use two forks to break apart any large clusters into bite-sized pieces.

    Finish and season

    Transfer cooled nuts to a bowl. Sprinkle with flaky sea salt and chopped parsley, tossing gently. If desired, drizzle with a little chili crisp or hot honey for extra heat/sweet contrast. Taste and adjust seasoning with a tiny pinch more salt if needed.

Store cooled nuts in an airtight container at room temperature for up to 2 weeks (they may soften slightly over time). For longer storage, refrigerate for up to 1 month; bring to room temperature before serving.
