Prep dry ingredients
In a large mixing bowl whisk together the all-purpose flour, cornmeal, baking powder, baking soda, kosher salt, and granulated sugar until evenly combined.

Combine wet ingredients
In a separate bowl or large measuring cup whisk the buttermilk with the eggs until smooth. Stir in the melted butter and 1–2 tablespoons of the vegetable oil to keep batter from sticking when cooking.

Make batter
Pour the wet mixture into the dry ingredients and gently fold with a spatula until just combined. The batter should be thick but pourable — similar to a slightly thicker pancake batter. Do not overmix; a few small lumps are fine. Let the batter rest for 5–10 minutes to hydrate the cornmeal.

Cook disks
Spoon or pour about 1/4 cup of batter per disk into the skillet to form 3–3.5 inch rounds (you can make larger 4–5 inch disks with 1/3 cup batter). Cook until the edges look set and bubbles begin to pop on the surface, about 2–3 minutes. Flip with a thin spatula and cook the second side until golden brown, 1.5–2 minutes more. Reduce heat slightly if disks brown too quickly.

Storage and reheating
Cool completely, then store leftover disks in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F (175°C) oven for 5–8 minutes or in a toaster or skillet over medium heat until warmed through and crisped on the outside. Do not microwave if you want to keep the crisp exterior.
