    Preheat and line pans

    Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats. Set aside.

    Measure dry ingredients

    In a medium bowl, whisk together the all-purpose flour, baking soda, and fine sea salt. Stir in the rolled oats until evenly distributed. Set aside.

Make the Dough

    Cream butter and sugars

    In a large mixing bowl (or the bowl of a stand mixer fitted with the paddle), beat the softened butter with the granulated sugar and light brown sugar on medium speed until light, fluffy, and pale in color, about 2 to 3 minutes. Scrape down the bowl as needed.

    Add eggs and vanilla

    Add the eggs one at a time, beating about 30 seconds after each addition until fully incorporated. Add the vanilla extract and mix until combined.

    Combine wet and dry

    With the mixer on low, gradually add the flour-oat mixture to the butter mixture in two additions, mixing just until combined and no large streaks of flour remain. Do not overmix to keep cookies tender.

    Fold in mix-ins

    Using a spatula, fold in the semisweet chocolate chips and optional chopped nuts until evenly distributed through the dough.

Portion and Bake

    Portion dough

    Using a 1.5 tablespoon cookie scoop (or two spoons), portion dough into rounded balls about 1.5 inches in diameter and place them 2 inches apart on the prepared baking sheets. Slightly flatten each ball with the palm of your hand or the bottom of a glass to encourage even baking.

    Bake

    Bake one sheet at a time in the preheated oven for 10 to 12 minutes, rotating the sheet halfway through if your oven has hot spots. Cookies are done when edges are set and lightly golden while the centers still look slightly soft.

    Finish and cool

    Remove the baking sheet from the oven. Immediately sprinkle each warm cookie with a small pinch of coarse flaky salt if using. Let the cookies cool on the baking sheet for 5 minutes to finish setting, then transfer to a wire rack to cool completely.
