    Melt and temper (preferred method)

    Chop the 12 oz bittersweet chocolate finely. Set aside a small 2 oz (from the 12 oz) piece for seeding if tempering by seeding. Place about two-thirds of the chopped chocolate in a heatproof bowl set over a saucepan of barely simmering water (double boiler). Stir gently until the chocolate reaches 115°F (46°C). Remove bowl from heat and add the reserved chopped chocolate (seed). Stir constantly until the chocolate cools and thickens and reaches 88–90°F (31–32°C) for dark chocolate. If using cocoa butter, add it with the seed chocolate. Add the 1 tsp neutral oil if you want extra gloss.

    Alternative: microwave method

    Microwave chopped chocolate in a microwave-safe bowl at 50% power in 20–30 second pulses, stirring between pulses, until mostly melted. Stir to melt remaining pieces; if temperature exceeds 115°F, cool by stirring to the target working temperature of 88–90°F.

    Prepare a bottle-shaped silicone mold or a clean small glass bottle that can be lined: working quickly while the chocolate is fluid, spoon or pour melted tempered chocolate into the mold/bottle and rotate to coat the interior evenly. You want the chocolate wall about 3–4 mm thick (a second coat may be required). Pour out excess chocolate back into the bowl after a few minutes, then place the mold upside down on a rack to let the coating set. Chill briefly in the refrigerator (5–10 minutes) only to firm the chocolate; avoid condensation.

    If a second coat is needed (to strengthen the shell), reheat remaining tempered chocolate slightly to working temperature and repeat coating. Once set, carefully demold the chocolate bottles. If using a glass bottle lined with chocolate, carefully break the glass away or gently warm the outside briefly to release (this method requires caution).

    Sprinkle a tiny pinch of sea salt flakes inside the neck or on the rim of the bottle mouth if desired for finishing contrast.

Almond Filling

    Prepare a caramelized almond paste (praline base). Line a baking sheet with parchment. In a medium saucepan, combine 1/2 cup granulated sugar and 2 tbsp water. Heat over medium, swirling the pan occasionally (do not stir with a spoon) until the sugar dissolves and turns a deep amber color — target about 340–350°F (170–177°C) or a rich golden-brown visually. Watch carefully to avoid burning.

    Immediately remove from heat and stir in the 1.5 cups roasted almonds until they are fully coated in caramel. Quickly spread the coated almonds on the prepared parchment in a single layer and allow to cool completely (about 10–15 minutes).

    Once cool and hardened, break the praline into pieces and transfer to a food processor. Pulse until you have a coarse to medium paste (praline). Add 2 tbsp unsalted butter and 3 tbsp heavy cream and pulse to combine. Scrape sides, then add 1 tsp vanilla extract and 1/4 tsp fine sea salt. Process until the mixture becomes a thick, slightly spreadable paste — stop before it becomes too oily. If too dry, add another teaspoon of cream; if too loose, pulse a few more times to firm.

    Taste and adjust salt or vanilla. The resulting almond filling should be rich, slightly grainy from praline, and scoopable for stuffing bottles.

Assembly & Finish

    Fill: Using a small spoon or disposable piping bag, spoon the almond praline filling into the prepared chocolate bottles. Fill to about 90% capacity to leave room for a sealing chocolate plug.

    Seal: Melt the 2 oz dark chocolate (use a small double boiler or microwave in short bursts) until smooth and at working temperature (~88–90°F if tempered). Spoon a small amount of melted chocolate over the filling to seal the bottle mouth and create a clean finish. Tilt and rotate the bottle to spread a thin seal if needed.

    Smooth & Clean: Wipe any excess chocolate from the outside edges with a warm, dry cloth. If you want a dusted look on the bottle necks, dust 1 tsp powdered sugar lightly with a small fine sieve once the seal is set.

    Chill & Set: Place the filled and sealed bottles in the refrigerator for 10–15 minutes to fully set the seals. Remove and allow to come to room temperature for 10–15 minutes before serving so the chocolate and filling show best texture and flavor.

    Storage: Store in an airtight container in a cool, dry place (60–68°F / 15–20°C) for up to 2 weeks. Refrigeration will shorten shelf life due to condensation on thawing; if refrigerated, bring to room temperature before serving.
