Veal Saltimbocca Ingredients
Method
Preparation Directions
Prepare the Veal
Pound the veal cutlets to about 1/4 inch thickness using a meat mallet. Season both sides with salt and pepper.
Assemble the Saltimbocca
On each veal cutlet, place a slice of prosciutto and 2 sage leaves. Secure with toothpicks if necessary.
Cook the Veal
In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add the veal cutlets and cook until browned, about 3-4 minutes per side. Remove from the skillet and set aside.
Make the Sauce
Pour in the white wine and scrape the bottom of the skillet to deglaze. Cook for 2-3 minutes until slightly reduced. Stir in the remaining butter.
Combine and Serve
Return the veal with prosciutto to the skillet, coating with the sauce. Cook for an additional 2 minutes to heat through, then serve hot.
