Prepare the Chicken
Pound the chicken breasts to an even thickness of about 1/2 inch. Season both sides with salt and black pepper.
Assemble the Dish
Place 2 slices of prosciutto on each chicken breast, followed by a few sage leaves. Press down gently to adhere.
Sauté the Chicken
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chicken, prosciutto side down, and cook for about 3-4 minutes per side until golden brown and cooked through. Remove the chicken and set aside.
Make the Sauce
Pour in the white wine and scrape up any browned bits from the bottom of the skillet. Let it simmer for about 5 minutes until slightly reduced.
Combine and Serve
Return the chicken to the skillet and let it simmer in the sauce for an additional 2-3 minutes. Serve hot, drizzled with the mushroom and wine sauce.
